Bangalore Knightrider (BKR) Tandoori Roti Sandwich

Bacon, Curry, Sandwiches; are all great British institutions, so obviously we have combined them all together. A great brunch or lunch idea. A spicy Indian inspired flavour bomb of a dry cured bacon. So wrong yet so very right!!

 

Ingredients

  • 3 or 4 rashers of BKR back bacon
  • 1 teaspoon of mango chutney
  • 1 tablespoon of mint and cucumber yoghurt Raita
  • 1 Tandoori roti flat bread (I made my own but you can buy at any supermarket or even better get down to your local curry house and pick up a plain naan)
  • Pinch of picked coriander leaves for garnish
  • 1 tablespoon of tomato, coriander, green chilli and red onion salsa
  • 1 teaspoon shop bought Bombay mix

Method

  • Sizzle bacon in a drizzle of vegetable oil until cooked through to your preference
  • Re-heat tandoori roti in hot oven
  • Spread mint and cucumber yoghurt raita on half of the base of the roti
  • Add salsa on top of raita
  • Add rashers of sizzling BKR
  • Top with Bombay mix (it gives a great crunch)
  • Top with coriander leaves
  • Fold filled roti into a sandwich and get munching
